Instant Pot Recipe!
There aren’t many things that I enjoy more than a quick, easy AND healthy dinner! We recently ordered the Instant Pot and it has been a real hit in our household! Last night I played with a recipe that can double as a ‘Mexican flavored soup’ OR a topping for tacos!
Alex and I (of course) choose large pieces of romaine in lieu of actual taco shells. Feel free to tweak and make this recipe your own. You can play with different shells, toppings or even double as a soup (which I admittedly liked even better!).
The fresh cilantro smells amazing and is a delightful addition to this recipe.
With a prep time and cook time of only 15 minutes each, this provides a quick meal that is healthy too! A double whammy in the A+A Wellness household!

INGREDIENTS
3 chicken breasts
1/3 cup lime juice
2 tbsp olive oil
1 tbsp honey
1 tbsp taco/mexican or chili seasoning (I used several pictured below)
1 1/2 cups chicken broth
1 cup chopped cilantro (divided)
Romaine Lettuce
Red Potatoes (if you choose to add these)
Topping ideas
diced red onion
Lettuce
Kraut
Shredded (organic grass fed) cheese shreds
salsa
Diced avocado
Diced tomatoes
INSTRUCTIONS
Dump all ingredients for chicken in Instant Pot, adding half of the cilantro and saving the other half for after. Add raw chicken breasts last. Set to manual and pressure cook on high for 3 minutes.
Instant Pot will take about 10 minutes to pre-heat and then the 5 minutes to cook. When complete, press cancel and do a quick release of the steam, waiting until the pressure gauge drops back down and the lid is safe to open.
Remove lid and shred chicken with a fork or wooden fork spoon. Add in additional 1/2 of fresh cilantro. Stir well until everything is combined. Chicken will be sitting in extra liquid so use a slotted spoon to serve.
Add chicken to warm romaine lettuce along with toppings of your choice.
Note:
- I doubled this recipe – depending on how many you are serving, it doubles easily.
- This recipe can work as a soup OR use a slotted spoon to use mixture for tacos. I added shredded cheese and made a bowl of soup and actually liked it even more! Delish!
- I used a variety of seasonings. You can use fantastic healthy seasonings and himalayan salt in place of ‘taco’ seasoning which is packed with sodium. I like to know I am ingesting really healthy seasonings and that I am getting a great quality sodium my body can use. Himalayan Salt is considered a supplement and packed w/86 trace minerals! Pic of the specific seasonings I used below.
